Homemade Cottage Cheese

I am on the hunt for a good cottage cheese recipe.  In the past year or so, I’ve made a few attempts at cheesemaking.  Halloumi was my first and although it didn’t have a great aesthetic, it was delicious and had just the right Halloumi texture.  I’ve also made some really yummy cream cheese.  It is so easy and so good.

Cottage cheese, however, is a different story.  I promised that I wouldn’t give you highlight reel only.  Also, I’m hoping one of you will have a good recipe that I can try.  I want one that uses rennet and not vinegar or lemon juice which will likely result in a flavourless cheese. I want some salty, creamy, cheesy goodness.

This recipe I tried did not work out.  Following the directions gave me a clump of welded curds, not the creamy, spoonable deliciousness I was expecting.

Couldn’t I just buy some cottage cheese?  Well, I thought so, but no.  I’ve looked at several stores in my area and they all have weird junk in their cottage cheese…. Whyyyyyy!? For yogurt I can find some with ingredients that are: milk and cultures.  I wanted same for cottage cheese, but no luck yet.  Until I find some, I will keep trying.

So… have a recipe for me?
